Many choose to go home but we decided to entrust Isaac to the grandparents and rendezvous in Vietnam.<\/p>\n<p>My trip from Seattle took about 17 hours. His, two days. One of my favorite experiences on that trip was a cooking class at the<a href=\"http:\/\/www.restaurant-hoian.com\/en\/cooking-class-in-hoian-vietnam\" target=\"_blank\" rel=\"nofollow\">\u00a0Morning Glory Cooking School<\/a>\u00a0\u00a0in the picturesque town of Hoi An along the central Vietnam coast. I wrote about it\u00a0<a href=\"http:\/\/theasiangrandmotherscookbook.com\/2012\/12\/12\/my-new-kitchen-toys\/\" target=\"_blank\" rel=\"nofollow\">here<\/a>.<\/p>\n<p>And this gorgeous mango salad is testimony to it. Every time, I make it&#8211;and it&#8217;s quite often&#8211;I think of the blissful (and childless) two weeks my husband and I spent in Vietnam, lovers without a care in the world, taking comfort in each other and in the moment that was now.<\/p>\n<p>~~~<\/p>\n<p><span style=\"text-decoration:underline\"><strong>Hoi An Mango Salad<\/strong><\/span><\/p>\n<p>Adapted from <strong><em><a href=\"http:\/\/www.restaurant-hoian.com\/index.php\/en\/taste-vietnam-traditional-vietnamese-food-ms-vy\/buy-the-cookbook-taste-vietnam-.html\" target=\"_blank\" rel=\"nofollow\">The Morning Glory Cookbook<\/a><\/em><\/strong>\u00a0by\u00a0Trinh Diem Vy<\/p>\n<p><a href=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_salad21.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2167\" alt=\"mango_salad2\" src=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_salad21.jpg?w=600\" width=\"600\" height=\"450\" srcset=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_salad21.jpg 640w, https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_salad21-300x225.jpg 300w, https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_salad21-320x240.jpg 320w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>The key to this vibrant salad is selecting a mango in the right stage of under-ripeness\u2014you want mango slices that are slightly tart and still have some crunch (I don\u2019t like them too sour though). Don&#8217;t focus on color as it&#8217;s not the best indicator of ripeness. Squeeze the mango gently and it should give ever so slightly but not too much. If it\u2019s too squishy, the mango will be too sweet and mushy, and is better eaten out of hand. The breed of mango doesn\u2019t matter as much&#8211;Ataulfo, Tommy Atkins, Kent, any of these will do.<\/p>\n<p>Time: 20 minutes<br \/>\nMakes: 4 to 6 appetizer servings<\/p>\n<p>1 medium (about 13 ounces) underripe mango<br \/>\n1 teaspoon chili paste<br \/>\n1 small clove garlic<br \/>\n2 teaspoons sugar (palm or white are fine)<br \/>\n2 teaspoons roasted sesame seeds<br \/>\n1 tablespoon vegetable oil<br \/>\n1 tablespoon lime juice (1 key lime)<br \/>\n1 teaspoon fish sauce<br \/>\n1 small onion, sliced and soaked in water to remove its bite (about 1 cup)<br \/>\n1 \u00bd cups Vietnamese mint (<a href=\"http:\/\/vietworldkitchen.typepad.com\/blog\/vietnamese-herb-primer.html#cilantro\" target=\"_blank\" rel=\"nofollow\">rau ram <\/a>or laksa leaf) and mint leaves<br \/>\n2 tablespoons <a title=\"5 (Aha!) Ways with Fried\u00a0Shallots\" href=\"http:\/\/theasiangrandmotherscookbook.com\/2011\/11\/10\/fried-shallot\/\" target=\"_blank\" rel=\"nofollow\">fried shallots<\/a><\/p>\n<p>Peel the mango with a vegetable peeler or sharp paring knife. Hold the mango firmly down on the chopping board (or in one hand if you are comfortable) and use a paring knife to make vertical incisions down the mango from stem-end to tip, about half-an-inch apart. Do this on both sides of the seed.<\/p>\n<p>With the vegetable peeler (or the <a title=\"My New Kitchen\u00a0Toys\" href=\"http:\/\/theasiangrandmotherscookbook.com\/2012\/12\/12\/my-new-kitchen-toys\/\" target=\"_blank\" rel=\"nofollow\">nifty knife<\/a> below), \u201cpeel\u201d strips of mango away from you.<\/p>\n<p><a href=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_mosaic.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2171\" alt=\"mango_mosaic\" src=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_mosaic.jpg?w=600\" width=\"600\" height=\"302\" srcset=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_mosaic.jpg 615w, https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/09\/mango_mosaic-300x151.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>In a mortar and pestle, grind the chili paste and garlic together. Place the chili-garlic paste in a large bowl and add the sugar, 1 teaspoon roasted sesame seeds, vegetable oil, lime juice, and fish sauce.
