She was recapping her past year and she ended her reflection with \u201cWhen in doubt, choose love.\u201d<\/p>\n<p>They could mean many things to many people, and I\u2019ve been thinking about what it means for me to \u201cchoose love.&#8221;<\/p>\n<p>2012 was a challenging year personally and love was often in short supply. Not that <em>I<\/em> wasn\u2019t loved, but rather that I wasn\u2019t a very loving person. I felt so drained I had no love to give.<\/p>\n<p>I had to get used to the fact that my husband was 6,720 miles away and 12-1\/2 hours ahead for an entire 12 months. And I worried (and still do) about his safety, every single day. Plus, I had to adjust to solo-parenting a toddler.<\/p>\n<p>After a three-year hiatus, I worked very hard to develop a book proposal (one that I thought was very sellable and timely) that was quickly shot down. I have yet worked up the nerve to submit it elsewhere.<\/p>\n<p>And I&#8217;m sure anyone who lives close to their parents can relate to the stress of having them live a stone&#8217;s throw away.<\/p>\n<p>Did I mention I&#8217;m solo-parenting a toddler? I definitely have a newfound awe and admiration for single parents everywhere!<\/p>\n<p>While I admit 2012 wasn\u2019t all that bad\u2014there was a trip to Vietnam to meet my husband, a paperback book launch&#8211;it was filled with plenty of angst and stress.<\/p>\n<p>I realize now that many of these events and circumstances were beyond my control. Yet I was riddled with\u00a0unnecessary\u00a0anxiety and\/or reacted negatively to them.<\/p>\n<p>In hindsight, I can come up with any number of \u201cwhat if?\u201d scenarios.<\/p>\n<p>What if I kept calm and didn\u2019t raise my voice at Isaac when he wasn&#8217;t behaving the way I wanted him to? Then maybe I wouldn\u2019t be wracked with guilt in the thereafter believing I was traumatizing my son and ruining him for life.<\/p>\n<p>What if I listened patiently every time my dad complained about a new ache or pain, or expressed concern that his memory wasn\u2019t as sharp as it used to be (aging has nothing to do with it, of course!). Instead, these could have been happy dad-and-daughter moments spent over a cup of coffee, especially if the topic at hand could be diverted.<\/p>\n<p>If I had chosen love in these circumstances, perhaps I wouldn\u2019t have expended superfluous time and energy getting worked up, upset, frustrated, etc., etc., you know what I mean. Thankfully, it\u2019s never too late.<\/p>\n<p>Today is only the 11th day of the new year but I\u2019ve already savored the power of choosing love.<\/p>\n<p>The other day, the cashier at Target had a face so sullen it rivaled Posh Spice&#8217;s&#8211; a.k.a. Victoria Beckham&#8217;s&#8211;perpetual pout (am I dating myself with this analogy?). Instead of condemning her off-putting attitude silently in my mind, I complimented her on her gorgeous red top out loud. That coaxed a smile out of both her and me.<\/p>\n<p>When my toddler asks for one more book, yet another sip of water, anything he can think of, to put off going to bed, I take a deep breath, tuck his blanket under his chin and hold him till he falls fast asleep. This phase won\u2019t last forever (I hope, gulp &#8230;).<\/p>\n<p>I\u2019m off to a good start, don\u2019t you think?<\/p>\n<p>Starting with this new year 2013, whatever the season, whatever the mood, <em>always<\/em> choose love.<\/p>\n<p>~~~<\/p>\n<p><strong><span style=\"text-decoration:underline\">Vietnamese Fresh Spring Rolls (<a class=\"zem_slink\" title=\"Summer roll\" href=\"http:\/\/en.wikipedia.org\/wiki\/Summer_roll\" target=\"_blank\" rel=\"wikipedia nofollow\">G\u1ecfi Cu\u1ed1n<\/a>)<\/span><\/strong><\/p>\n<p><a href=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/01\/all-rolled-up.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1792\" alt=\"all rolled up\" src=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/01\/all-rolled-up.jpg\" width=\"600\" height=\"400\" srcset=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/01\/all-rolled-up.jpg 640w, https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/01\/all-rolled-up-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>In line with our #LetsLunch theme of new beginnings and first times, I\u2019m going to start a new column about trying dishes I didn\u2019t think I could or would make at home. I\u2019ve been told many times how easy it is to make these fresh rolls but I\u2019ve always been intimidated by the <a class=\"zem_slink\" title=\"Rice paper\" href=\"http:\/\/en.wikipedia.org\/wiki\/Rice_paper\" target=\"_blank\" rel=\"wikipedia nofollow\">rice paper<\/a> wrappers. Most sources say to dip the dry rice paper rounds in water until soft but it seems impossible to get just right. While traveling in Vietnam, I learned two other methods of softening the rice paper: one is to wipe it with a wet, non-terry towel until pliable, and the second, use a spray bottle. The rest is easy. Well, the rolling does takes some practice but you\u2019ll eventually get the hang of it. The following recipe\/how-to is based on what I learned at a cooking class I took at the <a href=\"http:\/\/www.restaurant-hoian.com\/en\/cooking-class-in-hoian-vietnam\" target=\"_blank\" rel=\"nofollow\">Morning Glory Cooking School<\/a> in the beautiful town of <a href=\"https:\/\/www.google.com\/url?sa=t&amp;rct=j&amp;q=&amp;esrc=s&amp;source=web&amp;cd=1&amp;cad=rja&amp;ved=0CDQQFjAA&amp;url=http%3A%2F%2Fen.wikipedia.org%2Fwiki%2FHoi_An&amp;ei=YuvwUKTGI4GUiQLm_YGYCg&amp;usg=AFQjCNG3KVRRB-d2qDji-UUmOxDFOLXevg&amp;bvm=bv.1357700187,d.cGE\" target=\"_blank\" rel=\"nofollow\">Hoi An<\/a> in central Vietnam.<\/p>\n<p>Time: 45 minutes prep<br \/>\nMakes: 4 servings<\/p>\n<p>8 sheets rice paper wrappers, plus more in case some break (8 to10-inches across is best)<br \/>\nRed leaf, romaine, or butter lettuce<br \/>\n3 cups fresh herbs: mint, cilantro, Thai (or regular) basil, red perilla, <a class=\"zem_slink\" title=\"Persicaria odorata\" href=\"http:\/\/en.wikipedia.org\/wiki\/Persicaria_odorata\" target=\"_blank\" rel=\"wikipedia nofollow\">Vietnamese mint<\/a>, <a class=\"zem_slink\" title=\"Limnophila aromatica\" href=\"http:\/\/en.wikipedia.org\/wiki\/Limnophila_aromatica\" target=\"_blank\" rel=\"wikipedia nofollow\">rice paddy herb<\/a>, bean sprouts (any combination of these is fine)<br \/>\n<a href=\"http:\/\/theasiangrandmotherscookbook.wordpress.com\/2012\/08\/02\/vietnamese-pickles\/\" target=\"_blank\" rel=\"nofollow\">Carrot and daikon pickles<\/a><br \/>\n8 ounces small round rice noodles, cooked according to package directions (look for noodles labeled \u2018bun,\u2019 not the super thin vermicelli or <a class=\"zem_slink\" title=\"Cellophane noodles\" href=\"http:\/\/en.wikipedia.org\/wiki\/Cellophane_noodles\" target=\"_blank\" rel=\"wikipedia nofollow\">bean thread noodles<\/a>. If you have my <a href=\"http:\/\/www.amazon.com\/dp\/157061752X\" target=\"_blank\" rel=\"nofollow\">cookbook<\/a>, they are pictured as #1 on pg. 15)<br \/>\n8 small slices pork shoulder, cooked as desired (I like to use <a title=\"The Char Siu\u00a0Challenge\" href=\"http:\/\/theasiangrandmotherscookbook.wordpress.com\/2009\/03\/18\/the-char-siu-challenge\/\" target=\"_blank\" rel=\"nofollow\">char siu<\/a>, store-bought or home made)<br \/>\n12 large cooked shrimp, peeled and halved<br \/>\n12 (3-inch-length) pieces garlic chives<br \/>\n<strong>Dipping Sauce<\/strong> (see below)<\/p>\n<p>Lay all the ingredients out on the table and let everyone make their own rolls.<\/p>\n<p>Soften the rice paper using your method of choice:<br \/>\n1. Dip in a bowl of warm water for about 3-5 seconds (depending on its thickness).<br \/>\n2. Lay on a flat surface and wipe with a wet non-terry towel several times until pliable.<br \/>\n3. Fill a spray bottle with water and spray until pliable.<br \/>\nYou want the rice paper to be just soft enough that you can fold it. You will lessen the risk of over-soaking your rice paper wrapper if you use the latter two methods but it is up to you.<\/p>\n<p>Place the wrapper on a work service (a flat plate works fine) and lay a piece of lettuce on the edge closest to you. Grab a handful of herbs and place them on top of the lettuce. Place a handful of noodles on top of the greens. Add some pickles. Arrange 2 slices of pork above the noodles, followed by 3 slices of shrimp, pink-side down.<\/p>\n<div id=\"attachment_1791\" style=\"width: 610px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/01\/layout.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1791\" class=\"size-full wp-image-1791\" alt=\"layout\" src=\"https:\/\/apa.si.edu\/picklesandtea\/wp-content\/uploads\/sites\/14\/2013\/01\/layout.jpg\" width=\"600\" height=\"400\" \/><\/a><p id=\"caption-attachment-1791\" class=\"wp-caption-text\">In case you were wondering, the surprise in the middle is a deep-fried rice paper roll (a tip I learned at the Morning Glory Cooking School). Adds a lovely crunch to it!<\/p><\/div>\n<p>Fold the edge closest to you over the ingredients and start rolling, ensuring the roll is snug as you go. When you are about half-way, fold both sides in and \u00a0arrange three pieces of garlic chives on the right so that they jut out like palm leaves swaying in the wind. Continue rolling until you have a nice tight roll.<\/p>\n<p>If you tear the rice paper, don&#8217;t fret, just start over again. And even if your roll isn&#8217;t perfect, so what, it&#8217;ll still taste good!<\/p>\n<p>Serve with dipping sauce.<\/p>\n<p><span style=\"text-decoration:underline\"><strong>Dipping Sauce (N\u01b0\u1edbc m\u1eafm ch\u1ea5m)<\/strong><\/span><\/p>\n<p>Makes: 4 servings<\/p>\n<p>2 large cloves garlic, minced<br \/>\n1 to 2 Thai red chilies, or to taste, sliced<br \/>\n3 tablespoons sugar<br \/>\n3 tablespoons lime juice (from about 1 large lime)<br \/>\n2 tablespoons warm water<\/p>\n<p>Combine all the ingredients in a small bowl and stir until all the sugar has dissolved.<\/p>\n<p>~~~<\/p>\n<p><strong>This post is \u00a0part of #LetsLunch, our monthly Twitter-inspired food bloggers potluck.
