Here are the recipes I\u00a0talked about on <a href=\"http:\/\/kuow.org\/programs\/sound_focus.asp\" target=\"_blank\" rel=\"nofollow\">Sound Focus<\/a> on June 11. Enjoy and feel free to look around my blog and email me!<\/p>\n<p><strong><span style=\"text-decoration:underline\">Indonesian Cupcakes (<em>Kue Mangkok<\/em>)<\/span><\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"reflect\" src=\"http:\/\/farm4.static.flickr.com\/3265\/2570248317_5c4a2923bf.jpg?v=0\" alt=\"\" width=\"334\" height=\"500\" \/><\/p>\n<p><em>The teacups we used are\u00a0about the size of sake cups.<\/em><\/p>\n<p>As a little girl, I would make these delightful steamed cupcakes with my mum. I couldn&#8217;t reach the kitchen counters yet so we&#8217;d sit on the flour mixing the batter. Then we&#8217;d pour the batter into dainty little teacups arranged in\u00a0a steamer rack. We&#8217;ve always used metric measurements and they&#8217;re more accurate but I&#8217;ve also converted them into cups for convenience in the American kitchen. The\u00a0 method used below is very traditional&#8211;feel free to use a wooden spoon or a beater to mix the batter. Instead of teacups, you can use a mini muffin tin. Just adjust the steaming time.<\/p>\n<p>Makes: 40 cupcakes<\/p>\n<p>1 teaspoon instant yeast<br \/>\n100ml (1\/2 cup) warm water<br \/>\n1\/2 cup (100g) rice flour<br \/>\n4 cups (750g) shaved palm sugar<br \/>\n3\/4 cup (150g) granulated sugar<br \/>\n3 1\/3 cups (750 ml) coconut water (the liquid found within the husk, not the milk squeezed from the grated meat!)<br \/>\n3 1\/2 cups (550g) rice flour<br \/>\n3\/4 cup (125g) tapioca flour<br \/>\n1 1\/3 cup (325 ml) coconut milk<\/p>\n<p>Mix yeast, warm water and 1\/2 cup rice flour until well combined. Leave for 15 minutes until the mixture foams and the\u00a0starter is formed.<\/p>\n<p>In a medium saucepan, bring the palm and granulated sugars and coconut water to a gentle boil over medium heat. Stir until the sugars have dissolved. Strain and let cool a little.<\/p>\n<p>When the starter is ready, mix it together with the remaining rice flour and tapioca flour. Pour warm sugar syrup into the mixture a little at a time and mix until smooth with your hands. Beat the mixture with your hands for about 30 minutes.<\/p>\n<p>Pour in the coconut milk and mix well. Leave in a warm place (somewhere in the kitchen) for 3 hours until it rises.<\/p>\n<p>Grease the moulds with vegetable oil and heat them in the steamer rack for 15 minutes until they are hot.<\/p>\n<p>Pour batter into the moulds until almost full and steam over high heat until the cupcakes blossom, about 15 minutes. Don&#8217;t open the lid during steaming. Take off the stove and unmould the cup cakes when cool.<\/p>\n<p><strong><span style=\"text-decoration:underline\">Quinoa Salad and Green Onion Oil<\/span><\/strong><\/p>\n<p>Gently infused green onion oil is such a versatile condiment. It traditionally accompanies Asian dishes such as Cantonese white poached chicken and Vietnamese grilled beef wrapped in wild betel leaves (B\u00f2 L\u00e1 L\u1ed1t). Or drizzle it over grilled corn, a roasted or grilled vegetable m\u00e9lange, or mix it into this fresh salad made with quinoa and market-fresh vegetables.<\/p>\n<p>Makes: 4 to 6 servings as a side salad<\/p>\n<p>Green onion oil:<br \/>\n1\/4 cup canola oil<br \/>\n5 green onions, chopped<br \/>\n1 clove garlic, minced (optional)<\/p>\n<p>Quinoa salad:<br \/>\n2\u00a0cups corn kernels (from 2 medium ears of corn)<br \/>\n1\u00a0cup quinoa, cooked according to package directions<br \/>\n3\/4 cup cherry tomatoes, halved<br \/>\n1 medium cucumber, peeled and diced (2 to 3 cups)<br \/>\n1 small onion, chopped finely<br \/>\n1\/4 cup cilantro leaves<br \/>\n1\/4 cup lime juice<br \/>\nSalt and pepper to taste<\/p>\n<p>Place green onions in a heatproof bowl.<\/p>\n<p>Heat the oil in a small saucepan over medium heat until it starts to bubble gently, about 2 to 3 minutes. Don&#8217;t let it smoke. Remove saucepan from the heat and pour oil carefully over the green onions. It might sizzle and splatter so stand back. Sprinkle with salt and mix well.<\/p>\n<p>Place in the refrigerator to cool and help preserve the green onions bright green color. Remove after 10 minutes and set aside at room temperature until ready to serve.<\/p>\n<p>In a large bowl, combine salad ingredients and mix toss with green onion oil.
