Here’s a snippet …
When I was growing up in Singapore, my mother would sometimes bring home a whole or half duck—succulent, slick with soy sauce, and very tasty—from the nearby hawker center to supplement our dinner. My siblings and I would dig in heartily, devouring every part of the bird. And we, a family of dark meat lovers, always came away with satisfied grins on our faces, as unlike with a whole chicken, no one had to contend with white meat. Even though mum is a fabulous cook, I remember wishing that she would be too busy to cook more often…

Pat,
Will this recipe work with chicken?
Hi Tuty,
Ive not tried it with chicken but I don’t see why not. If you try it with chicken, let me know how it goes!
yum, I love duck myself. especially when the skin is nice and crispy
I like both the crispy skin versions and the smooth silky skins you get with some soy sauce glazed duck, Thomas. Both are delicious!
LOVE DUCK! Especially Peking Duck with the little Baos, green onions, and plum sauce!
Yum, peking duck! It’s been a long time since I’ve had the authentic version. I remember having them with pancakes instead of the baos and they were the best!m
I cooked this recipe today, used whole chicken instead of duck, it turned out very good. Will cook again with duck in Christmas. I believe the flavor will be better.
Thank you for sharing the wonderful recipe.
lol! When I’m too busy to cook, duck or bbq pork is exactly what I pick up for dinner! But now I might just have to try making it on my own. Thanks for the recipe! 🙂
